Chef Noah spoke with the Gazette’s Teresa Farney about utilizing as much of the whole animal as possible in restaurants.

Chefs are working wonders with “variety meats” — such as tongue, ears, tails and liver — to make delectable dishes. Cow tongue can be used to make tasty tacos.
